Brisket Rendering Calculator
Estimate brisket rendering based on the time spent at different internal temperatures during the cook and hold.
Cook
Enter the number of hours spent in each internal-temperature range. Decimals are allowed — for example, 0.5 = 30 minutes.

This calculator provides an estimate based on time and internal temperature. Actual brisket tenderness can vary.
Changelog
- August 30, 2026: Temperature entries now represent weighted rendering rates across the temperature zones (i.e. 150 is now the weighted rendering rate from 150 to 159F) rather than a single exact temperature, giving a more realistic rendering estimate. An “Exact Temp” option has also been added for controlled cooks or holds (For example, if you are holding exactly at 150 F then check the "Exact Temp" box for that field.
