My name is Steve Gow.
I’m a Canadian Forces veteran and the creator of the Smoke Trails BBQ YouTube channel based in Calgary, Canada.
What started as a hobby cooking brisket and ribs in my backyard quickly turned into a deep obsession with understanding why great BBQ works. I began combining real cooking experiments with food science principles to figure out how backyard cooks could consistently get better results.
